Super sprouted, super scrummy n super quick and easy to make..
1 leafy spring green
1/2 an avocado
1/2 courgette - grated
1 small tomato
2 brazil nuts - chopped
2 mushrooms - chopped
sprinkle of sprouted buckwheat groats
In a small bowl mix together the avocado and grated courgette, then spoon the mixture over your leafy spring green, top with the rest of the ingredients, sprinkle on a little soy sauce and tahini..then roll..however fancy or messy as you like..mine was more of a scrunch than a roll..hence no photos of a fancy roll!
This is a great light lunch or perfect for a main meal served with rice or noodles.
